Mango Jelly with Jaggery:
Seasonal Mangoes are not only delicious but also nutritious. Fresh ripe Mangoes stay fresh for a week or ten days. To enjoy these Mangoes for a longer period, we can dry the pulp to make jelly and consume for over a year. It doesn’t really take much time or doesn’t need many ingredients to prepare Mango jelly. But the resting time is high for this. Drying Mango pulp in the sun is one of the best methods to store Mangoes for a longer duration. Mangoes, naturally made jaggery, and a pinch of cardamom powder are the only ingredients needed for Mamidi Tandra preparation. As jaggery is healthier than regular sugar, we make mango jelly using pure jaggery. Mangoes being rich in magnesium and potassium will aid in lowering the blood pressure, thereby regulating your cardiac health. Mangiferin, a compound in mangoes will reduce the inflammation in your heart. Jaggery has iron and rich in antioxidants will benefit us in increasing hemoglobin and boosting immunity.
